Comforting Homemade Pie

“We must have a pie. Stress cannot exist in the presence of a pie.”
― David Marnet
I got up early and began baking, even before my almost-15 year old son was awake. The sun was still low in the sky, streaming into my kitchen to rest on just-rolled dough.
Some say pie-making is becoming a lost art.
It evokes the cozy, but inconvenient realm of wood burning stoves and laundry hung out to dry.
But, truly good things need not be lost.
“Pie is a symbol of something bigger than Mom and her way with desserts.”
~ Pasquale Le Draqulec
"Cooking demands attention, patience, and above all, a respect for the gifts of the earth. It is a form of worship, a way of giving thanks."
~ Judith B. Jones
Jacek and I drank our morning coffee in the garden...taking delight in a warm, comforting slice of strawberry-rhubarb pie.
“Pie and Coffee is approximately the third best social interaction a man can hope to have with a woman.”
~Unknown
"To me, pie is poetry that makes the world a better place.”
― Ken Haedrich
(I used organic strawberries, and rhubarb from our garden with the recipe below. Keep the art of pie-making alive! I'd love to see pictures of your pies...please share.)
XOXO
